not REAL! So get REAL!


America Ferrera is such a natural beauty and is seen by millions on a regular basis.  Some of us are blssed to have a fuller body like hers, but then it's also true to see how girls/women let themselves be so mentally judged by social beliefs...So, without further delay:  The lies Photo Editing can "help" tell and problems it creates...

Actually, it makes me feel a bit sick to my stomach to even look at this image.  This was an ad for Ralph Lauren that took quite a bit of heat back in 2009.  I want to show you this image to educate you girls on the power of Photoshop.  This image goes to show you, you can take a seemingly normal body and use a tool called “liquify” that can potentially make your waist look smaller than you head!  Yes, check out the photo…and please say it ain’t so!  Honestly, the poor girl is so warped she doesn’t even look human anymore!  I think the thing about this ad that personally disturbs me the most is, I wonder how many desks this print went across and how many people signed off on it before it went to print…and not one person took a step back and said, “Wait a minute, this just doesn’t look right.”  Have we become that immune to startling thin women in magazines that this doesn’t raise an eyebrow within the advertising industry?
If anyone questions why an estimated 24 MILLION INDIVIDUALS IN OUR COUNTRY SUFFER FROM AN EATING DISORDER, this photo is probably a good indication why.  Girls, in particular, are trying to keep up with a body type that is physically IMPOSSIBLE!  Girls, none of us can compete with a Photoshop warping tool!  Take that in for a moment…you can’t compete with the impossible, so let go of that pressure to compete with what only a computer software can create.  The liquify tool reminds me of those warping mirrors that you sit in front of as a kid where your head becomes shaped like an hourglass alien?!??!  You know what I’m talking about!  The tool takes the normal and turns it into the impossible.
Below are some very interesting and startling facts about eating disorders that I found from the NATIONAL ASSOCIATION OF ANOREXIA NERVOSA AND ASSOCIATED DISORDERS while trying to pull the most recent data.
*Eating disorders have the highest mortality rate of any mental illness*Anorexia is the third most common chronic illness among adolescents*47% of girls in 5th-12th grade reported wanting to lose weight because of magazine pictures*69% of girls in 5th-12th grade reported that magazine pictures influenced their idea of a perfect body shape*95% of those who have eating disorders are between the ages of 12 and 25.8*The body type portrayed in advertising as the ideal is possessed naturally by only 5% of American females*81% of 10 year olds are afraid of being fat
Now those facts should be a tough pill to swallow.  If you are one of those 24 million people that are battling an eating disorder, or you aren’t quite sure if it is “technically” a disorder, I encourage you to GET HELP HERE.  You are not alone in this battle and there is no need for you to feel that way.  Your story might just save another girl from this deadly disease.

Little Muffin (IUD and Pregnancy)

For the past 2 years, I have suffered an array of physical pains and health issues all resulting mainly from an IUD I have been using for contraceptive.  First, it fell out 3 weeks after being placed in and was replaced with a new one that made me have extremely heavy and painful menstrual cycles every month thereafter, though everyone has different side effects.  The doctor recommended taking 6 Motrin tablets during my cycle days to minimize the amount of blood clots and release...which worked! I unfortunately developed anemia (1 1/2 yrs later) because of the constant loss of iron from the bleeding, changing a super tampon AND a maxi pad every 2-3 hours for 5 straight days.  I was still breast feeding my child and that also drained me of even more energy.  I then had an "ulcer attack" in which I experienced chills, fever, excruciating and gut-wrenching stomach pain and upper left shoulder blade sharp pain about 2 years and 1 month from having an IUD. It was caused due to the constant ibuprofen I was placing in my system and resulted in me also having a stomach bacterial infection that needed to be treated by a combined therapy treatment medication, which made me begin to ween my boy from breastmilk at night.  Around this same time I had my last menstrual cycle recorded as well.  I've had stress, exhaustion, pains, nausea, dizziness, aches, nipple chaffing, joint pains, deficiencies, and even felt my left ovary swollen for some time and would try to massage the pain away.  The doctors kept saying it was just all normal and kept handing me prescriptions,though I would relieve my own pains with teas and a healthy diet.  About 2 years and 3 months into my IUD (Paraguard) I stopped breastfeeding completely, and began to feel strange, getting baby fever and telling my husband I felt pregnant every week.  I took 3 at-home pregnancy tests, all negtive, so we would laugh it off, but as a woman you still have a funny gut feeling something's inside you.  Andrew would sometimes rub my tummy and say, "baby!" and I would explain that yeah he used to be in there a while ago, but he would just hug my waist and rest his head there.

Well, 2 years and 7 months after having the IUD, I had had enough! The constant pains, the nausea, the lightheaded days, weight fluctuations, etc... it was too much.  I scheduled an appointment with a doctor to talk about how I could end this all.  I wanted to get better!  If I had a stone or whatever else in me causing the bloating, aches and lack of menstruation, then I wanted an answer...no more diagnosis and probabilities.  I demanded an ultrasound and more blood work today and as the doctor walked me into the ultrasound room, saying he knew it was my gall bladder and saying he'll take a look at how my IUD was placed too.... he saw a baby!  That's right, there was a baby about 16-17 weeks old inside of me!  I'm not gonna lie, I cried.  I was in shock.  Not because I didn't want a baby (which I've been begging my husband to agree to plan with me already and secretly praying for too), but because it was nearly impossible.  I knew the risks, was it alive? If it was, would it grow to be a full grown baby?

The doctor searched for my IUD, which I had recently felt inside, and it was safely tucked away in my cervix, leaving the uterus and baby inside of it unharmed.  I sighed with great relief when I saw that baby jump and kick...it was right near the ovary I have been massaging when I felt pains...I cried more.  I asked how healthy it looked through tears and he began to take measurements and was exited and surprised himself saying he'd never had a patient walk in with an IUD inside and this far along in a pregnancy..."it's one in a million!" he said and smiled big, "it's looking healthy!"

The rest as they say is history, funny how both my pregnancies have been a shock and though I like to plan almost every detail in my life, the surprise of having a baby come to us is just great.  I'm grateful!  I love this baby already and I only wish I would've known earlier to nourish it more properly, but so far it's healthy...it's safe...it's growing...and I love him/her with every part of me.  I don't care about going through more pain at the moment....I just want baby to be healthy!   I want everyone to know I am having a new family member come in a really big way, by beating the odds, by prayer, and by only divine power.

NOTE TO BABY:  Ok, little one, though I've missed 16 weeks of your journey, I know now and I'm gonna do my best :-)  I hope you read this some day and feel special in every way because you are one of life's biggest blessings ♥

My way

I like cereal every now and then, probably not as much as my husband, but I still eat it.  I eat it a bit differently.  I  prefer serving myself in a cup.  I used to do it only when I was in a hurry, now I just like doing it this way.  Ha, Okay, that was my random thought of the day!
Here are some other things eat for breakfast:

Fresh herbs and your kitchen

Ever since we've moved to a new place last year, I've been needing some air in the house!  It's a great location and condo to live in, but in Utah the winter keeps people indoors for a LONG time.  I wanted something to do.  I needed some sun!!! I needed some fresh oxygen!!  Then, of course in my head, I thought of plants.  What a better way to bring life to this new place?  I can also teach my son about growth and mother nature besides reading books to him all the time.  So, as I shopped for some necessities one day, I quickly took a look at the clearance isle at one of our local general stores.  I saw that there were herb plants for only $1.50!!! Including a small planter with cute letters.  I had to get it!!!
So, here it is.  My son(19 months then) and I planted these and finally saw our parsley spring out lively and fresh!  I love cooking and having this a way better option than the dried version I usually buy.  Now, the only reason I buy dried herbs for cooking is because when I buy the fresh herbs, they go real bad or dry up.  I'm no specialist to keeping herbs potent nor do I know how to make sure it's still safe to eat.  So I buy the cheaper, dry herbs to add to my dishes when I'm cooking.  Recently, I bought a mint plant as well and boy is that smell strong!  I use mint for teas and I love it!!!  Tea can be therapeutic, medicinal, and healing.  Here's a quick recipe for making proper tea.  This is a general rule for most teas so they can be actually still potent and make an effect.
YOU WILL NEED
Water for boiling
Pot
Herb
Honey for sweetening because it's healthier and medicinal (sugar[even Splenda] defeats the purpose of taking in such rich nutrients and actually ferments in your stomach)
MAKE IT
1.  If this is just for you, then boil a little more than 2 cups of water and follow this general rule for more people.  This should boil for about 10 minutes on medium heat.
2.  After you see bubbling water, lower it to simmering heat and add the herbs.  Let this simmer and boil for about 10 more minutes.  This allows the herbs to soften and let out it's flavors and nutrients.
3.  Now, remove it from heat and let it stand until it's safe enough to consume.  After you pour the tea into your cup, quickly add some honey.  Natural honey the best, from bees.  It enhances the flavors and the aroma is incomparable!!

BEWARE:  Tea should not be left standing for more than 7-12 hours, depending on the herbs being used.  Please, be aware that I do not cosume black tea, nor weight-loss gimmick teas.  My advice is for general consumption of Chamomille(manzanilla), Mint, and other common household herbs.  If you would like a tea for a specific issue or want to know more about herbal uses visit:

My measurements and almost ending the detox/cleanse

So, last week on, Saturday, I started my diet to just get my insides better. So far, I've improved in stamina, energy, activity, less dry skin, and especially my mood. I can't even try to explain how great I really feel overall. Well, on the plus, I've lost some weight. From what I remember at my last doctor's visit, I was 137lbs. I will also give out my measurements(no shame): 45, 39, and 47. Yeah, pretty thicky-thick, huh, considering my height, 5'2. I know, but the good news is that I'm now: 39, 33, 39 exactly! So I lost: 6in, 6in, and 8in. The latter I believe I lost more because I've been taking walks daily. So, as you can see, the results are just 7 days away everytime I cleanse and detox. All I did was the Pineapple diet. Everyone around me, except my family because they do it too, was thinking I was starving....I wasn't. I was full all the time and cleasing while kicking out junk from my insides and also making my metabolism a bit faster as well. I loved it! I can't lie, nor put up a hype...it was simple and luckily, I will be doing it again with my husband in 2 weeks to help support him since he now wants to do it as well.

Since I don't think it's a good idea to do only Pineapple Diet repeat in such close range, I will combine it with the Raw Foods Diet Cleanse and Detox.

Oh, when I get a chance to weight myself, I will and post those results too.

Wow, free exercise videos that work for women!

So, I was going to out today in the morning again to walk, but the weather is really cold.  I would do it, but I  take my baby with me and I also have some bronchitis issues that return everytime I expose myself to extreme cold weather unneccesarily.  So, I really wanted some cardio done and I walked up and down our two story condo a few times until my legs gave in.  Guess what?  Even though my legs gave in, my body still had energy so I wanted to do one of my workout videos I have for home in DVDs...problem is: I'm so energetic from still going through my detox that those workouts just seem boring!  Well, to make things come to the end, I found a website hosted by a woman that has posted FREE videos to download on computer and save!  I used to see YouTube vids and then followed along, but it's so much better to see things on a TV screen and still have tons of space to use for exercise and have free hands. Besides, I have a DVD movie maker/converter I bought and I love making quick videos on it for my kid...now it's my turn to have a DVD.

I'm sharing this with you so that you can do it too or just take a look at everything she has to offer on health too.  She's pretty savvy and intense, so be prepared to really get out of your comfort zone and face the reality of food and health.

My Needed Detox and Cleanse

So, I've been gaining some weight recently.  I know I don't eat wrong, like junk food or fast food, and I cook everything I eat, but...I'm very stressed.  Stress is our bodies enemy because it releases toxins into your bloodstream, as does anger and fear.  I've gotten married and I just worry about everyone else over me...but I love lovin'.

Anyway, I don't get panic attacks, but I do worry a lot.   Lately, it's  money.  I don't mind saying it because everyone worries about it, a lot.  Ever since I stopped "working" I've stepped back from that control panel and my hubby has made some regrettable decisions, but he fixes them if possible.  He's learning, and I just have to let him learn about how money management is also a partnership, whether or not I get a payroll.  I'm kind of a control-freak too and I love to make plans. Plans make the world go 'round, in a very organized way.  I also have an IUD as my contraceptive.  Unfortunately (we are all adults here) this makes me have a super heavy menstrual.  I need a Tampax and Maxi change every 2-3 hours for 5 days straight.  No light days.  Im' regular though.  So, I inevitably developed anemia.  Another thing, Andrew is super active and I've had to channel some of his brain's activity to reading and learning since he was a year, but he's a never-ending human circus.  He's been like that since he could walk.  Many are impressed he's not in his terrible twos yet.  I love him though!  Then, there's a Guatemala vacation my husband wants to take with his family, which means more money, and we have to take our baby too because his family says he needs to experience it.  I know he won't remember a single thing though, but I gotta go with the flow and enjoy the ride fully to avoid any unnecessary stress.  It seems I'm almost venting, but I'm not.  I use music and art for that, and recently running too.

So, what am I gonna do to remedy at least partial of the stress and get rid of toxin loads?  A cleansing of course and detoxification!  I used to do this all the time before I married and maintained my weight at a healthy 123-125lbs.  I'm no doctor, but my dad is a self-taught nutritionist and while he was reading and testing things for himself, I followed/read along since I was a female and so we compared differences in results after trying our individual experiences.  My mom was always so busy and I was at a peak of wanting to know more...I guess I still am, haha.  Well, after I was married I became pregnant and ended at 179lbs right before my baby was born a little earlier than expected, but healthy.  Now, I weight 132lbs.  You gotta realize I have big cheeks and a round face, so my weight can be seen instantly.  I am also very short, 5'2. Don't get me wrong, I love my body and myself, but I know when my body needs to start getting in gear again from the inside.

I love cleansing my body and going through a detox because it rejuvenates me and maintains my weight without sacrifices.  Of course, I don't eat much junk food anyway or fast food, but I can get away with eating almost anything I actually like.  The reason I used to maintain my weight was because I cleansed my body  every 3 months or so.  Our bodies are like cars, you need to tune them up and make sure things run good from the inside.  Otherwise, that's how you start to get problems and buildup of toxins your body can't tolerate and we are such beautiful creations that it's a waste to be careless of our organs. Symptoms that you may be accumulating toxins at a rate higher than your body can process include fatigue, irritability, skin problems, digestive issues, aches and pains, stress, and even other behavioral problems.

Now, I've written very much and it's time to tell you the specifics of cleansing and detox so you can get a "tune up" if you wan to try.   I'm no doctor and you need to know your body well before committing to these methods of naturally cleansing.  I'm currently on my 3rd day of Pineapple and Chlorophyll juice.

Pineapple and Chlorophyll Cleanse/Detox
PURPOSE: Kicks your metabolism into high gear naturally from the pineapple, and chlorophyll acts as super nutrients and supports your intestinal and circulatory health, so your body gets a vacation from eating bad fats, but still gets all it needs.
EXTRAS:  Lose up to 10lbs along the process. My dad and I tried it at the same time and he lost almost 12lbs, while I lost 10lbs.  The juice is really tasty too!
WHAT YOU NEED:  Natural pineapple juice (no sugars or concentrate)and lots of it, 32oz Liquid Chlorophyll from Nature's Sunshine (it's the best/purest we've tried without "adding" more unnecessary ingredients), Spirulina tablets.
WHAT TO DO:  During 7 days, all you consume is pineapple juice with the Chlorophyll in it.  Nothing else.  I combine both in a clean, empty gallon and put it in the fridge and keep refilling until the 7 days are up.  For every 8oz of juice, add a teaspoon of chlorophyll.  If I go out, I carry my bottle with this mixture inside.  Take a Spirulina tablet in the morning and again at night, varying to how much meat you're used to consuming.  So the more meat you eat, then up the ratio, read the label too.
NOTE:  The first 2 days are always the hardest, mentally.  Realize that you need to fully commit to get through it. 


Raw Foods Diet Cleanse/Detox
PURPOSE:  This really sets your whole digestive system in good, clean shape.  Your body will get a rest from toxins and soon after you end you will immediately see what foods your body does not take well or what effects they bring if you do consume them.  Even the apple of your cheeks become naturally flushed!
EXTRAS:  Lose up to 10lbs if you do the 10-day liquids.  I lost 8lbs and my father lost about 10 with this too.  Your taste buds will also become very sensible afterwards and tastes of cooked foods can be powerful and some very sour.
WHAT YOU NEED:  Raw foods and a blender. Distilled water.  If you are deficient in anything else, please, take the necessary supplements.  Raw foods are all fresh foods like vegetables and fruits.  Nothing cooked or with preservatives, nor grains or meats.  Lemon or limes to help with digestion, cleansing, flavoring, and purifying.  Other than fresh produce, you can consume raw oatmeal, EVOO (first cold pressed), sea salt, natural honey and soy milk(minimally).  No nuts.
WHAT TO DO:  Start by eating only raw foods for 2 whole days.  On the third day, you will start with liquids counting as your first day of liquid raw foods, so you need to blend everything and make smoothies. Get creative and explore how satisfying this can be.  Here, you let your digestive system not do any work as far as breaking down your foods goes and so your body will naturally focus on other parts that have been needing some work or attention.  Amazing, huh?  There are three options while on the liquid part which are 3, 5, or 10 total days of liquids.  The longer you go, the more you clean, but 10 days is very cleansing and should be done about twice a year only.  While on the liquid phase, you cannot chew gum or stimulate your mouth to produce saliva in any way.  This will set your digestion into gear and defeats the purpose of letting it rest to detox.  If you do, drink water immediately.  Finally, after your liquid phase, end with another 2 days of eating raw foods and continue eating as normal afterwards.
NOTE:  Try eating rich fruits that will help still bring in Omega3 and other good fatty acids still in your system, like avocado.  Also, consume your smoothies fresh, do not store for more than 2 hours at a time.  Also, if you cheat(meaning even a bite of that nasty hamburger), then you must start from day 1, meaning eating raw foods.  It's not that hard, but we mentally make it a battle.

Well, I hope this inspires someone to detox or cleanse.  Get to know your bodies and find out why you have certain triggers or problems.  If anything is changing that's not normal, then try a cleanse and see if it gets rid of it.  Sometimes it takes 2 weeks up to a month for your body to get rid of something bad in the system.  Otherwise, see a doctor and tell them what you really are experiencing that is bothersome.  Whether you decide to see a doctor or cleanse, do it now.  Don't wait for things to get worse or decide to live with it because it will only result in something bad in the long run that could have been prevented.

Ice Cream Alternative

Do you love the sweet and chilly feeling of ice cream? Do you feel sometimes guilty of eating a little more than the serving suggestion on the Nutritional Label? Do you really read it after you buy it? Well, there are lots of alternatives to getting the regular ice cream from a bucket or tiny pint that squeezes out your pocket money.

First, make Popsicles. If it's a chilly, sweet rush that your body craves, then chances are that you'll still be satisfied from eating one, or two. You can easily make them yourself. Avoid buying the boxes that claim to be made of real juice, seeming natural...just buy a Popsicle container-maker, even found in dollar stores, and fill in with your favorite real juice(powdered drinks are bad for you and they just freeze up tasteless). Let it sit while you make dinner and after everyone's stuffed from the delicious suppper you made, then pull out the popcicles! They do take at least 2 hours to get firm all the way, if you put them towards the back of your freezer. My husband gets a sweet tooth late at night and I'm determined to help him with making him a happier, and healthier guy...yes, it's super tough, but he loves what I make and is surprised when I tell him it's so healthy too.

Which brings me to a small sidenote: habits. What we freely give to our children now will create habits for their future. Perfect example, my husband. He's used to eating out...a lot...and has a sweet tooth. To make a long story short, his father was diagnosed with diabetes over a year now and he's in his mid-40s. That's young! My grandmother died of diabetes and I wrote a post on it the day she passed. My father is a pretty healthy guy and self-taught/self-experimented nutritionist and he's so healthy that he ONLY suffers from allergies at his mid-50s and has8 children, the youngest being 4 and 7 year old sons that he still plays horse with and helps build forts for them. Lesson: the habits we create will help maintain us or destroy us and we are responsible for the habits our children learn to create that will eventually lead to a longer or shorter life.

Now, back to normal ice-cream alternatives...frozen yogurt. You can easily find this at the grocery next to the normal ice-cream. Sure it costs a few cents more, but I have a motto: I can pay $1 more for this food I'll eat now, or I can put it in my body and live with it until I medically need to spend hundreds of dollars on medications later...yeah, the $1 sounds better.

Shakes! Oh I just love these! I buy bananas when they're on sale and of course, we sometimes can't finish it all. Partially I just store up in the freezer when it's ripe and the other I bake. The freezer portions are thrown into a soymilk shake and blended until frothy and hmmm....sweet heaven. I love home-made shakes! You can do the same with berries you see on sale. I don't even bother putting these in the frigde, they just go straight to the freezer. They thaw pretty fast too if I'm not using them as shake ingredients.

If you really want to get the sweet craving out of the way, drink a tall glass of water and wait about 30 mintues while you keep yourself busy. Sometimes, you'll forget, but if you don't then grab vanilla yogurt and sprinkle on chocolate chips, frozen berries, or other sweet you have that won't hurt your budget or health.

Pizadillas

Well, I have been cooking this little entree ever since I was...about 12.  I loved making it for my brother sna sisters when I would babysit them (there were 8 of us) and so it was always a hit.

Now, I do it for my son too and it a great alternative to eating pizza or plain quezadillas.  Plus, if you cut your cheese just right, then each serving is only 14 grams of fat and 31g for your carbohydrates.  That really beats a pizza slice by a  mile and the taste...well, like my boy says,"yum, yum!"

YOU WILL NEED
Cheese ( I used cheddar because I was out of mozzarella, but mozzarella is healthier and if you're lactose intolerant, like me, then it has a smaller effect on your body.)
Tortillas
Spaghetti sauce, or Marinara (try buying the chunky kind with lots of veggies to get some consumption going)
Lunch meat or leftovers for "toppings", sliced very small (optional)
Aluminum Foil
Large cookie sheet pan
MAKE IT
  1. Preheat oven to 300 degrees feirinheit.  Cover your coookie sheet pan with aluminum foil.  Place as many tortillas can fit without touching each other and spoon sauce on top each one.  Make sure you're leaving space around the sauce in the tortillas or you'll create a mess later.
  2. Cut cheese and place on top of sauce.  I sliced my cheese thin, because a little goes a long way when it melts in the oven.  Keep everything relatively close to the edges, but not touching them.
  3. If you decided to cut meat for this, now is the time to add it.
  4. Place in oven for 5 minutes if you used cheddar cheese.  If you used mozarella, cook for 8 minutes.
  5. Remove and serve.  I cut my boy's like a real pizza, but had to finger-tear it even smaller for him, you can just bite into it.
This dish is more filling than it looks, so listen to your stomach, not your taste buds.  Besides, portion is what matters when you want to create good habits in your life.
WARNING: This is so delicious that you might be cooking lots if you have kids, so get ready to make plenty!  This is one tasty meal you know is actually good for your family's bodies.




Tasty ice-cream for your heart and body

Your health: It all starts with will power.  If you don't follow through, you'll never get there and it starts with small steps, not big leaps.

Here's a healthier version of eating ice-cream at home.  Also, try opting for frozen yogurt that's sold in almost all grocery stores now...lucky you! No more trips to that expesive frozen yogurt place down the street when you can buy some for the whole family at the same price and still have left overs!  Plus, you can get a little something extra with all the extra cash, every bit matters.
I chose vanilla frozen yogurt in my grocery's ice-cream section and I had the rest at home.  I poured on some Wheat Germ (high in fiber and folic acid, which helps cells regenerate and reproduce), plain oat flakes, and flaxseed.  Then I mixed it all together with my spoon after I served it becasue I like it like a Blizzard, but much healthier.

Homemade Banana Bread(healthy)


When I bake, ocassionally, I do actually keep measurements pretty accurate because I've noticed that pinching here or adding there just doesn't cut it when baking.  So, I actually put in measurements this time.


YOU WILL NEED
1 cup sugar(I prefer brown)
3 ripe bananas, mashed (ripe bananas are pretty dark and soft and sweeter, look at my picture to have an idea of what you should be looking for)
1 6oz jar baby food(any fruit), or the oil you use, but baby food is healthier, so substitute, commit.
1/2 cup egg substitute (or 2 egg whites, and one egg yolk)
2 cups all-purpose flour (I used enriched wheat)
1/2 teaspoon salt, or a gentle squeeze of lemon(optional, a good friend of mine told of this once[lemon]and it adds pizzaz)
1 teaspoon baking soda
1/4 cup finely cut walnuts (optional)(My hubby doesn't like them, but I love them, but compromise, compromise, right?)
Electric mixer, or really fast hands
A large, deep bowl to mix ingredients


MAKE IT
  1. Preheat oven to 350 degrees feirinheit.  Prepare a 9in loaf pan by lightly spraing with cooking spray.  I sometimes use a drizzle of EVOO and wipe around with a napkin or paper towel, making sure I get the corners.
  2. In a deep and large bowl, use the electric mixer to combine the sugar, mashed bananas, baby food, and egg substitute(or egg white and egg yolk).  Beat on medium speed until it all well blended.
  3. Add the flour, salt, and baking soda.  Start at low speed and gently speed up to beat with the electric mixer until it all mixed well together.
  4. If your adding nuts, fold them in now, with a spatula, not the mixer.
  5. Pour your batter into the already prepared baking dish and place in the center of oven for 40 to 45 minutes.  Poke with a toothpick or kabob stick near the center of the bread and make sure it comes out clean without sticky residue.
  6. Let it cool for about 10 minutes, then remove while it's warm, not hot and place on a rack or paper towel atop a large plate and continue to let it cool.
That's it!  You cut down on loads of calories, believe it or not.  It's completely fat-free if you ommit the nuts, but almods have a good type of fat for your body, so opt for those if you can.

I love Yoga!

I don't have any strict regime on working out, but one thing I always do to keep flexible and not get cramped is YOGA.  The best thing is that you can do it at home.

It's relaxing, calming, and gives me a sense of self-control when I get the chance to do it. I don't overdo it of course, but I try to keep at it 3 to 4 times a week, for about 20 to 30 minutes.  I have a DVD and follow along or just wing-it(not often though) since I've done this for a while now.  The most important thing is breathing and not quantity, but quality.  It improves my breathing control for singing too.  Start small and you'll see the increase of your flexibility soon too.  Here are some links for poses and why it's good for you:

It works! I haven't had a leg cramp since I was a senior in high school.  That's 7 years and that's no lie!  I know it's because of Yoga and because I've committed to drinking more water.  Not to mention the benefit of not having to worry about having a hunchback as I get wiser(older).  I hope that when I get old I can still wrestle my younger brothers or snatch them into a choke-hold.  JK, sort of.

When cutting an orange/lemon/lime/tangerine...

If it's kinda chili outside, but you still like to eat citrus fruits, then save your peels!  I know I love the aroma of boiling my citrus peels, whether I'm peeling some for my family, or just for myself.  It's healthy to keep as much as you can eat from the white layer just below the peel too.  It's high in calcium.

 Put the peels in a medium-sized pot and fill with water.  Set to medium-high heat, set in your peels and let it sit.  You can start one in the morning and keep an eye on it throughout the day and refill with water if your running real low.  You don't want it to bubble per say, but you do want some vapor rising up.  You warm up your house and give it a warm citrus smell too.  Save on your electricity for the day if you heat it just right!Everyone's stove is different so figure it out.

Also, if you just cut lemons/limes for squeezing into juice, a recipe or over food, then save those halves.  There are many uses for these if your gonna be cleaning for that day.  You can use it to clean you tabletop, counters, and oven top.  Just grab the sliced halves you save, squeeze and wipe on surface and wipe away with a damp rag (or whatever you use to clean).  If you have issues with needing chemicals, then lightly spray/pour onto the rag before you use it.  If you're not using the pieces that day then let it sit overnight in a dish that might need to be soaked with water for a few hours overnight and rinse away in the morning.  Try not to exceed a day to get rid of the slice.  Those same lemon/lime slices can be thrown into your dish disposal and release a fresh scent in your sink and surrounding areas. Just make sure the outside layer is still soft, not hard because then you'll ruin your disposal.

Tasty Mexican-style Chicken, Potatoes, and Quesadillas

Well, I just couldn't wait any longer to post another recipe! Note that I boiled the potatoes beforehand in water with a little salt for about 20 minutes. The best way to cook this is by boiling the water first, while chopping potatoes, then gently adding them in after water has boiled. BTW- Quesadillas are mistaken often for only being tortillas with cheese in between, not so, bc quesadillas refers to any type of tortilla surrounding a mostly-cheese center.  Also, I ration everything for 3 people, unless stated otherwise, and this is a healthier and less seasoned version than most recipes, so to say, MY home-cooked STYLE ;-)

YOU WILL NEED
Drained and Boiled potatoes, not cooked all the way yet. Sweet potatoes are healthiest, but I used russet bc they were on sale (1 med sized for every 2 people)
Chicken meat, skinless and boneless, cut into ~1 1/2 x 1/2 in pieces (Thigh meat is cheaper,cut off excess fat and rinse/pat dry, then rub salt into chicken pieces)
1/2 an onion, thinly sliced
1/2 green pepper, sliced and diced
Tomatoes, diced (~2 Roma)
Chopped fresh Cilantro or dried
Mozzarella Cheese
Salt
Cumin
EVOO (Extra Virgin Olive Oil)
Non-stick Spray
Big Round Tortillas (I used flour, again on sale, but Wheat is healthier)
Balsamic Vinaigrette (or Apple cider vinegar)
Large non-stick pan
Oven-safe glassware
MAKE IT
1.    Place pan in high heat & spray large skillet-style pan with non-stick. Bring down heat after and add sliced onions, while they cook slowly add EVOO on lower heat setting so onions don't stick until bottom of pan has a thin layer of EVOO. Jumping oils are NOT good (it's toxic), the heat may be too high, lower it bc EVOO can't keep it's molecules together with intense heat, you want something healthy right? Remember that you are sauteing, not frying.
2.   Once onions are almost translucent (not solid white anymore) add the green bell pepper. and add the salted chicken pieces. The heat should be set to medium-low, or as long as your oil is not smoking or jumping, but cooking your food.  Your chicken will start to soak up all the delicious flavors around it especially bc you cleaned it good so it's pores are open, it'll also excrete chicken "juices" into the pan.  Preheat your oven to 350 degrees Fahrenheit.
3.   Add a pinch (literally) of cumin powder along with the diced tomatoes and mix.  Let it cook and move it every 5 min or so while it caramelizes all over.  Mm, great smell, huh?  Meanwhile, get your boiled potatoes and set into your glassware.  Keep your empty, but warm pot on top of an "off" burner.  Pour in the balsamic vinaigrette(or apple cider) with a ladle bc you need to make sure all the cooked potatoes soak a little bit of this until your bottom has a thin layer.  Add 1 tablespoon of balsamic or cider to your cooking chicken with ~1 teaspoon cilantro and stir.
4.   Cover your potatoes with foil and place in central part of oven for 20-25 minutes.  Poke with a fork to see that potatoes are cooked all the way and are soft, not mushy or hard.  Turn off oven, but leave potatoes inside...
5.   Go back to your chicken, it should be caramelized and juices/flavors are wrapped around your food, now transfer it over to the pan that was boiling your potatoes earlier and set to low heat, this will add a darker outer layer to your chicken, but not burn it.  Leave the remaining yummy oils in pan and start warming up a tortilla on it set ti high heat.

6.   Turn over tortilla (to make it look so golden, gently stir it around the pan to let it absorb flavors and colors).  Bring out potatoes and uncover.  Sprinkle ~1/2 teaspoon Cilantro and add mozzarella cheese pieces randomly (not too much bc it'll bulk into a ball), and gently fold in into the rest of the cooked potatoes. 
7.   Add Mozzarella cheese to the center (in a line) of the tortilla and fold in thirds, keeping the open fold cooking under first.  Then turn over and cook just enough to let cheese inside melt.

8.   Now serve everything.  Buen provecho!
